My children adore biscuits. They’re not fussy – they’ll go crackers for even the cheapest, most boring rich tea biscuit. Occasionally, to alleviate the sugar-related guilt, I bake a batch of these easy cheese biscuits. It’s basically a simple cheese straw recipe, but cut out into fun shapes. This is based on a recipe from my old favourite, the Be-Ro book. They’re great for after school snacking, and I’m quite partial to one washed down with a glass of wine.
Ingredients
100g self-raising flour
50g margarine
80-100g finely grated mature cheddar (depending on how much you have to spare)
I egg, beaten
a pinch each of salt and mustard powder (cayenne would work equally well)
1. Preheat your oven to 180 degrees C. Grease a baking sheet
2. Put flour, salt and mustard powder in a large bowl and mix. Add the margarine and rub it in until the mixture resembles breadcrumbs.
3. Mix in the grated cheese and pour in enough of the egg to bring the dough together. I find about half the egg works well. If you use a table knife to stir the egg in, it helps to form a stiff dough.
4. Roll out on a floured surface and cut into shapes with cutters. Alternatively, cut into thin strips for cheese straws. Place on baking tray and brush with the remaining beaten egg.
5. Bake in the oven for between 10-15 minutes, or until golden brown
