Following on from last week, here’s another honest post about what we really eat for those mad Monday-Friday family mealtimes.
Monday: Chicken Stir-fry
I don’t own a proper wok, but I can make a fairly decent stir-fry using my heavy cast iron frying pan. This was a simple mix of chicken breast, garlic, ginger, onions and lots of colourful vegetables. I ate mine with noodles and everyone else had rice. The boys did ok with this, certainly better than they used to, and no one complained about the garlic and ginger. The chicken was popular, vegetables less so – bean sprouts are considered beyond the pale by my children!
Tuesday – Toad in the Hole
James was away until Thursday so I didn’t want to cook anything too complicated. Unfortunately, I had some sausages that needed using up, so I had to make Toad-in-the-Hole – which wasn’t too much hassle in the end. I’d forgotten that Gabriel had already had sausages for lunch at school, so he wasn’t that keen and ate mainly batter. This was made with a small quantity of batter (100g flour, ½ pint of milk and one egg) which I find makes the perfect Hole.
Wednesday – Shop bought pasta
I really did need a quick, easy option tonight so we had our usual weekly packet of Tortellini, served with salad. This went down ok with the boys.
Thursday – Fish cakes, chips and salad
James got back from Germany today. We were all tired so I chucked some fish cakes and fish fingers in the oven. Meal was enlivened slightly by a nice salad and a can of lager from Berlin. Delicious German chocolate for pudding.
Friday – Pizza
Takeaway pizza may have happened tonight. I try not to order it too often as Tom is a pizza-hater, but he promised to try and eat some. He managed a bit, but not much. How can anyone dislike pizza?
My verdict: This was not the best week – mostly, because it is hard to motivate myself to cook anything elaborate when James is away. It’s so hard to find something that’s speedy and relatively healthy that will appeal to two small boys. Hopefully next week will be better!
