This has felt the longest, wettest week ever. It’s been more like October than June and I’ve got major cabin fever. After such a boring week, I’m determined to make the most of this weekend. Here’s everything you need to feel inspired!
Oatmeal, yoghurt and prune muffins
These are porridge in muffin form! Perfect for a lazy weekend brunch and if you’re lucky they’ll be some left over for rushed weekday breakfasts. I’ve adapted a recipe from my favourite muffin book which is delicious and low fat.
You will need:
- 170g self-raising flour
- 1/2 tsp salt
- 85g porridge oats
- 240 ml natural yoghurt
- 1/2 tsp bicarbonate of soda
- 60 ml milk
- 1 egg
- 120g soft brown sugar
- 90ml corn oil (or any vegetable oil)
- 120g of soft prunes chopped into small pieces
- 12 muffin cases
Pre-heat the oven to 190℃ and fill a muffin tin with cases. Mix the flour and salt together in a bowl and set aside. In a separate large bowl mix together the oats, yoghurt and bicarbonate of soda. Then add the milk, egg and sugar and beat everything together well. Carefully add the dry ingredients and the prunes into the wet mixture and gently fold until combined. Do not over-mix – you want a lumpy batter with no dry flour. Spoon into your muffin cases and then sprinkle with a little extra sugar and oats. Bake in the oven for 20-25 mins (or until golden brown).
A weekend playlist, plus some interesting radio
This week I’ve been listening to Radio 4’s Living Memory, a series of interviews with centenarians. This gentle, thoughtful programme is packed with interesting anecdotes and wisdom on life. It’s a breath a fresh air. Music wise, I’ve compiled a playlist that’s got me through many a wet school run. You can download it on Spotify here.
Killing Eve series 2
Have you binge-watched the whole series yet? If I didn’t have kids to amuse, then I’d probably indulge in the whole thing in one go this weekend. I’ve just finished the third episode and I’m still loving it. It’s preposterous, and all the better for it. Plus, Jodie Comer as Villanelle is a marvel, right?
One good G&T and a few mocktails
Did I mention I’m on a diet? Consequently, I’ll be swapping my usual Friday night glasses of fizzy wine for a less calorific gin & tonic. My favourite is Anno Kentish Gin and some posh tonic water from Fever-Tree. Drinking less is a good thing anyway – especially as I felt more than a little guilty about my usual consumption after watching this week’s Panorama. If you’re looking to cut down too, I love a fruity mocktail made with a splash of grown-up fruit syrup and some posh tonic. Add plenty of ice, frozen fruit and mint and it’ll feel very satisfying. Coat of the week
This is supposed to be the ‘dress of the week’ segment. But that just wasn’t happening in this weather. Instead, here’s a rather fabulous coat I bought from Monki this week. I actually got it to put away for the autumn and really didn’t expect to be wearing it in June. I went for a size 12, which is nicely over-sized.
