The best weekends don’t have to be complicated. Here are some super simple ideas for things to do, eat and wear.
Sow some radish seeds
I am enormously proud to have grown my first ever radishes. And I can’t get over how INCREDIBLY easy it is to grow them. All you need is a large to medium sized plastic plant pot (I bought mine in Wilko’s), some compost and a packet of seeds. They only take about 3-4 weeks to grow and it’s genuinely like a little miracle. Also, they taste amazing – like a taste explosion of sweet, hot, sourness.
Make Welsh cakes
There are few things more life affirming than a freshly made Welsh cake, hot from the griddle and dripping with butter. The ready made versions are lovely, but if you’ve got a bit of time to spare this weekend you won’t regret making a batch.
A cast iron frying pan or griddle is the traditional way to cook them, but I’ve now switched to using my electric pancake hot plate and it works a treat. If you don’t have any of these, then a well greased regular frying pan will be OK.
Here’s my favourite Welsh cake recipe, taken from the Be-Ro book:
Ingredients:
- 225g self-raising flour
- pinch salt
- 100g margarine
- 50g caster sugar
- 50g currants
- 1 egg
- 2 tbsp milk
Mix flour and salt, rub in margarine until the mixture resembles bread crumbs. Stir in sugar and currants. Whisk the egg and milk together and then add to the mix until you have a stiff dough. Roll out your dough to a thickness of 5mm and cut into rounds with a fluted cutter. Cook on a moderately hot greased griddle for about 3 minutes on each side.

Dress of the week
My favourite dress of the week is this beautiful floral number by Boden. Isn’t it glorious? It’s made from a light cotton, so it’s a good choice for summery days. However, I also think it’s crying out for a heeled ankle boot and jacket come autumn.
